"100% Sauvignon Blanc grown in limestone and chalk not far from Sancerre and very similar in style with its bright, laser beam of citrus fruit and mineral flavors. This cuvée comes from a total of 3.7 hectares of vines all over 50 years old. Total production for this cuvée is under 2000 cases. The wine is fermented with natural yeasts in temperature controlled steel. It rests for 4 to 5 months on the lees - with 1 or 2 lees stirring."
